Ingredients
1 Bag PLANTSTRONG cornbread muffin mix
½ Cup cinnamon applesauce
1 ½ Cups plant milk
1 Teaspoon cinnamon
3 Ripe bananas
2 Tablespoons date sugar
½ Teaspoon cinnamon
⅓ Cup chopped walnuts
Directions
Preheat oven to 375 degrees F.
Mash 2 bananas and mix with applesauce, milk, 1 t. cinnamon and muffin mix until blended.
Dice up remaining banana and fold into batter.
Line 12 cavity muffin tin with parchment liners and fill with batter.
Mix date sugar and ½ teaspoon of cinnamon with chopped nuts, top each muffin batter with mixture - pressing nuts into batter.
