Ingredients

  • 4 cups shredded carrots
  • 3 cups old fashioned rolled oats
  • 1 cup unsweetened applesauce
  • 1 cup oat flour
  • 1/2 cup raisins
  • 1/2 cup walnuts, optional
  • 1 1/2 teaspoons baking powder
  • 2 tablespoons cinnamon, divided
  • 1 teaspoon ground turmeric
  • 1 teaspoon pumpkin pie spice
  • 4 cups Plant Strong Unsweetened Almond Milk
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract

Directions

  1. Preheat the oven to 425°F. Lightly prepare a 9×13-inch baking dish.

  2. In a large bowl, combine the shredded carrots, oats, applesauce, oat flour, raisins, walnuts (if using), baking powder, 1 tablespoon cinnamon, turmeric, and pumpkin pie spice.

  3. Add the almond milk, maple syrup, and vanilla extract. Stir until everything is evenly combined.

  4. Pour the mixture into the prepared 9×13-inch baking dish and spread evenly. Sprinkle the remaining 1 tablespoon cinnamon over the top.

  5. Bake for about 30 minutes for a softer, scoopable oatmeal bake or 45 minutes for a firmer, sliceable texture. Allow to cool slightly before serving.
