Cheezy Chickpea Broccoli Soup

Ingredients
- 2 cans chickpeas, reserve liquid (see step one)
- 3/4 cup nutritional yeast
- 1/4 cup whole wheat flour
- 1 box PLANTSTRONG Slow Simmered Vegetable Broth or 2 cups no salt added vegetable broth
- 2 cups unsweetened plant milk
- 1 teaspoon Bragg’s Liquid Aminos or low sodium tamari
- 1 teaspoon yellow mustard
- 1 teaspoon smoked paprika
- 1/2 teaspoon turmeric
- 1 head broccoli chopped fine
- Salt and Fresh cracked black pepper to taste
Directions
- Whisk flour, nutritional yeast, turmeric, and smoked paprika with the drained liquid (also called “aquafaba”) from the chickpeas.
- Add the Bragg’s and the broth until well combined. Bring to a boil, then reduce the heat to low.
- Add the plant milk and whisk until blended.
- Add chickpeas and broccoli and simmer on low for 10 minutes or until broccoli is tender.
- Do not bring to a boil after you add the plant milk. Salt to taste and serve with fresh cracked black pepper.
