Chickpea Caesar Lettuce Wraps

Ingredients
- 1/4 cup tahini
- 1 tbsp + 1 tsp miso paste
- 3/4 tsp black pepper
- 2 cloves garlic, grated
- 3 tbsp lemon juice
- 3 tbsp PLANTSTRONG Unsweetened Almond Milk
- 1 15-oz can chickpeas, drained & rinsed
- 1 head Bibb or butter lettuce
- ½ avocado, thinly sliced
- 1 cup cherry tomatoes, sliced in half
- 1/4 cup carrots, grated (or store-bought shredded)
- Zest from 1/2 lemon
Directions
- Add chickpeas to a microwave-safe bowl and microwave for 30-45 seconds, until slightly warm.
- In a jar, add all ingredients for the dressing. Shake vigorously until ingredients are fully incorporated. If needed whisk to remove any clumps.
- Pour dressing over chickpeas, and toss. Add a pinch of salt to taste.
- Prep Bibb lettuce into cups. Spoon chickpeas onto lettuce, and top with avocado, cherry tomatoes, grated carrots, and lemon zest. Enjoy!
