Chickpea Caesar Lettuce Wraps

Ingredients

  • 1/4 cup tahini
  • 1 tbsp + 1 tsp miso paste
  • 3/4 tsp black pepper
  • 2 cloves garlic, grated
  • 3 tbsp lemon juice
  • 3 tbsp PLANTSTRONG Unsweetened Almond Milk
  • 1 15-oz can chickpeas, drained & rinsed
  • 1 head Bibb or butter lettuce
  • ½ avocado, thinly sliced
  • 1 cup cherry tomatoes, sliced in half
  • 1/4 cup carrots, grated (or store-bought shredded)
  • Zest from 1/2 lemon

Directions

  1. Add chickpeas to a microwave-safe bowl and microwave for 30-45 seconds, until slightly warm.
  2. In a jar, add all ingredients for the dressing. Shake vigorously until ingredients are fully incorporated. If needed whisk to remove any clumps.
  3. Pour dressing over chickpeas, and toss. Add a pinch of salt to taste.
  4. Prep Bibb lettuce into cups. Spoon chickpeas onto lettuce, and top with avocado, cherry tomatoes, grated carrots, and lemon zest. Enjoy!
