Ingredients

  • 2 packages PLANTSTRONG Chili of choice or four cups of homemade chili
  • 1 package gluten-free or old-fashioned PLANTSTRONG Cornbread mix
  • 1 cup frozen corn, thawed (optional)
  • ¼ cup unsweetened applesauce
  • 1 ½ cups of vegetable broth or PLANTSTRONG Unsweetened Almond Milk

Directions

  1. Preheat the oven to 400°F (204°C) and pour chili into a large cast-iron skillet.
  2. In a medium-sized bowl, whisk together the cornbread mix, corn, applesauce, and broth or milk.
  3. Pour the cornbread over the chili and bake in oven for 25-30 minutes or cornbread is golden brown and cooked through.
