Ingredients

  • 1 cup PLANTSTRONG Dark Chocolate Granola
  • 2 tbsp + 2 tsp unsweetened cocoa powder
  • 1 tsp baking powder
  • ¼ cup unsweetened applesauce
  • ½ cup plant milk 
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • Optional garnish: plant milk yogurt, date sweetened chocolate drizzle, fresh raspberries, fresh mint

Directions

  1. Preheat oven to 350℉. Alternatively, you can prepare in the air fryer on the “bake” setting, also at 350℉.
  2. Place granola in a blender and blend into fine crumbs.
  3. Add granola crumbs, cocoa powder, and baking powder to a bowl and whisk together.
  4. Add applesauce, plant milk, maple syrup, and vanilla. Stir to combine.
  5. Divide the batter evenly among small (6 oz) ramekins, filling each about ¾ full.
  6. Bake for 15-17 minutes, until cakes are set. Let cool for 8-10 minutes or so before serving.
  7. Option to garnish with plant milk yogurt, date sweetened chocolate drizzle, fresh raspberries, and fresh mint.
