Ingredients
- 1 cup PLANTSTRONG Dark Chocolate Granola
- 2 tbsp + 2 tsp unsweetened cocoa powder
- 1 tsp baking powder
- ¼ cup unsweetened applesauce
- ½ cup plant milk
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- Optional garnish: plant milk yogurt, date sweetened chocolate drizzle, fresh raspberries, fresh mint
Directions
- Preheat oven to 350℉. Alternatively, you can prepare in the air fryer on the “bake” setting, also at 350℉.
- Place granola in a blender and blend into fine crumbs.
- Add granola crumbs, cocoa powder, and baking powder to a bowl and whisk together.
- Add applesauce, plant milk, maple syrup, and vanilla. Stir to combine.
- Divide the batter evenly among small (6 oz) ramekins, filling each about ¾ full.
- Bake for 15-17 minutes, until cakes are set. Let cool for 8-10 minutes or so before serving.
- Option to garnish with plant milk yogurt, date sweetened chocolate drizzle, fresh raspberries, and fresh mint.
