Crunchy Chocolate Covered Raspberry Bites

Ingredients
- 12 oz (1 pint) fresh raspberries
- 2 tbsp chia seeds
- ¾ cup chocolate chips
- ⅓ cup granola (we used our PLANTSTRONG dark chocolate granola)
Directions
- Line a baking sheet with parchment paper.
- Place raspberries in a bowl. Mash fully with a fork.
- Add chia seeds and stir to combine.
- Spoon raspberry mixture onto baking sheet, about 2 tbsp per bite. Transfer baking tray to the freezer and freeze for 20-30 minutes, until mixture has hardened.
- Add chocolate chips to microwave-safe bowl. Heat for 30 seconds, then stir. Heat in 15-second increments until all chocolate is melted, stirring in between.
- Break up any large chunks in the granola, then add it to your melted chocolate and stir to combine.
- Place one raspberry bite on a fork in one hand. In the other hand, spoon the granola chocolate mixture to cover the raspberry bite. Tap to release any extra chocolate.
- Place back onto your baking sheet and back into the freezer for about 10 minutes, or until chocolate has hardened.
- Enjoy, or store in an airtight container in the freezer.
