Crunchy Chocolate Covered Raspberry Bites

Ingredients

  • 12 oz (1 pint) fresh raspberries
  • 2 tbsp chia seeds
  • ¾ cup chocolate chips
  • ⅓ cup granola (we used our PLANTSTRONG dark chocolate granola)

Directions

  1. Line a baking sheet with parchment paper.
  2. Place raspberries in a bowl. Mash fully with a fork.
  3. Add chia seeds and stir to combine.
  4. Spoon raspberry mixture onto baking sheet, about 2 tbsp per bite. Transfer baking tray to the freezer and freeze for 20-30 minutes, until mixture has hardened.
  5. Add chocolate chips to microwave-safe bowl. Heat for 30 seconds, then stir. Heat in 15-second increments until all chocolate is melted, stirring in between.
  6. Break up any large chunks in the granola, then add it to your melted chocolate and stir to combine.
  7. Place one raspberry bite on a fork in one hand. In the other hand, spoon the granola chocolate mixture to cover the raspberry bite. Tap to release any extra chocolate.
  8. Place back onto your baking sheet and back into the freezer for about 10 minutes, or until chocolate has hardened.
  9. Enjoy, or store in an airtight container in the freezer.
