Deconstructed Thai Spring Roll Salad
Craving something fresh or looking for a delicious way to get a ton of vibrant, raw vegetables? Try this deconstructed Thai spring roll - just as delicious as the original hand-held format, bit way less work! Makes two large, overflowing bowls or one monster salad.

Ingredients
- 1 red pepper (chopped)
- 1 cup purple cabbage (thin sliced)
- ½ large cucumber (chopped)
- 2 carrots (finely grated)
- 1 mango (diced)
- ½ cup frozen, shelled edamame (thawed)
- ½ cup firm tofu (cubed)
- ½ cup grain of choice (we like Jasmine rice or white quinoa)
- 1 packet Organic Peanut Curry Secret Sauce (prepared with ½ cup water or to desired consistency)
- Garnish with fresh Thai basil, minced mint leaves, crushed peanuts and your favorite hot sauce!
Directions
- Prepare fresh vegetables as desired, add to large bowl.
- Douse with Secret Sauce
- Add garnish. Snap a pic. Enjoy!
