Deconstructed Thai Spring Roll Salad

Craving something fresh or looking for a delicious way to get a ton of vibrant, raw vegetables? Try this deconstructed Thai spring roll - just as delicious as the original hand-held format, bit way less work! Makes two large, overflowing bowls or one monster salad.

Ingredients

  • 1 red pepper (chopped)
  • 1 cup purple cabbage (thin sliced)
  • ½ large cucumber (chopped)
  • 2 carrots (finely grated)
  • 1 mango (diced)
  • ½ cup frozen, shelled edamame (thawed)
  • ½ cup firm tofu (cubed)
  • ½ cup grain of choice (we like Jasmine rice or white quinoa)
  • 1 packet Organic Peanut Curry Secret Sauce (prepared with ½ cup water or to desired consistency)
  • Garnish with fresh Thai basil, minced mint leaves, crushed peanuts and your favorite hot sauce!

Directions

  1. Prepare fresh vegetables as desired, add to large bowl.
  2. Douse with Secret Sauce 
  3. Add garnish. Snap a pic. Enjoy!
