Ingredients

  • 2 to 3 cups cooked farro
  • 1.5 to 2 cups roasted sweet potatoes
  • 1 can black beans, drained and rinsed
  • 1 avocado, sliced
  • ¼ cup pepitas
  • Lime wedges, for serving
  • 3 tablespoons tahini
  • 2 tablespoons lime juice
  • 1 tablespoon maple syrup
  • ½ teaspoon cumin
  • 1 to 3 tablespoons water, to thin as needed

Directions

  1. In a small bowl, whisk together the tahini, lime juice, maple syrup, and cumin. Adjust to taste.
  2. Add water 1 tablespoon at a time until the dressing is smooth and pourable.
  3. Divide the cooked farro among the bowls.
  4. Top each bowl with roasted sweet potatoes, black beans, avocado, and pepitas.
  5. Drizzle with the tahini lime dressing.
  6. Finish with a squeeze of fresh lime and enjoy.
