Ingredients
- 2 to 3 cups cooked farro
- 1.5 to 2 cups roasted sweet potatoes
- 1 can black beans, drained and rinsed
- 1 avocado, sliced
- ¼ cup pepitas
- Lime wedges, for serving
- 3 tablespoons tahini
- 2 tablespoons lime juice
- 1 tablespoon maple syrup
- ½ teaspoon cumin
- 1 to 3 tablespoons water, to thin as needed
Directions
- In a small bowl, whisk together the tahini, lime juice, maple syrup, and cumin. Adjust to taste.
- Add water 1 tablespoon at a time until the dressing is smooth and pourable.
- Divide the cooked farro among the bowls.
- Top each bowl with roasted sweet potatoes, black beans, avocado, and pepitas.
- Drizzle with the tahini lime dressing.
- Finish with a squeeze of fresh lime and enjoy.
