These Greek-Inspired Meatball Pitas are loaded with hearty Portobello Mushroom meatballs, creamy hummus, crisp cucumber, juicy tomatoes, red onion, and olives. The meatballs cook in the air fryer in just 11 minutes, making this a fresh and satisfying lunch or easy weeknight dinner.

Ingredients

  • 1 package (6 oz) Plant Strong Portobello Mushroom Burger Mix
  • 6 oz hot water
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¾ tsp dried oregano
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 4 whole wheat pitas
  • ½ cup hummus
  • 1 cucumber, chopped
  • 1 cup cherry tomatoes, halved or quartered
  • ½ small red onion, diced
  • ¼ cup pitted olives, sliced or chopped

Directions

  1. Empty the entire package of Portobello Mushroom Burger Mix into a medium bowl. Add the hot water, onion powder, garlic powder, and oregano and stir until thoroughly combined.

  2. Cover and let the mixture sit for 10 minutes.

  3. Scoop the mixture and roll into small, evenly sized meatballs.

  4. Arrange the meatballs in the air fryer basket with a little space between each one. Air fry for 11 minutes, or until browned on the outside and heated through. Alternatively, you can bake them in a 375F oven for 10-12 minutes.

  5. Warm and open the whole wheat pitas. Spread about 2 tablespoons of hummus inside each pita.

  6. Add 2-3 meatballs to each pita and top with cucumber, tomatoes, red onion, and olives. Serve immediately.
