These Halloween Dirt Cups bring a little Halloween fun to a dessert made with simple, real ingredients. A thick, creamy Chocolate Tofu Pudding forms the base, while Plant Strong Chocolate Granola adds a generous layer of whole-grain crunch on top to create the “dirt.”

Instead of traditional decorated cookies or candy, each cup is finished with a simple no-bake tombstone made from Medjool dates, oats, and almond butter. The result is a Halloween treat with plenty of contrast between creamy pudding, crunchy granola, and chewy date-oat bites.

The pudding and tombstones can both be prepared ahead of time, then the cups take just a few minutes to assemble when you're ready to serve. Add the Chocolate Granola shortly before serving to keep that “dirt” nice and crunchy.

These Halloween Dirt Cups layer thick Chocolate Tofu Pudding with crunchy Plant Strong Chocolate Granola “dirt” and homemade Date Oat Tombstones for a fun Halloween dessert made with simple ingredients. They look festive without requiring complicated decorating, piping, or baking.

Ingredients

    For the Chocolate Tofu Pudding

    • 1 package (305 g) silken tofu, drained
    • 3 tablespoons pure maple syrup
    • ¼ cup Plant Strong Oat Walnut Milk
    • 2 tablespoons unsweetened cocoa powder
    • 2 ounces (55–60 g) dark chocolate, melted
    • 1 teaspoon vanilla extract

    For the No-Bake Date Oat Tombstones

    • 5 Medjool dates, pitted
    • 3 tablespoons rolled oats
    • 2 teaspoons natural almond butter
    • 1 teaspoon water, only if needed

    For Assembly

    • 1 cup Plant Strong Chocolate Granola
    • 4 small clementines or mandarins
    • 1 small celery stalk

    Directions

    1. Place the dark chocolate in a microwave-safe bowl. Microwave for 30 seconds, stir, then continue heating in 15-second intervals, stirring between each, until almost completely melted. Continue stirring until smooth. Set aside to cool slightly.

    2. Add the silken tofu, maple syrup, Oat Walnut Milk, cocoa powder, and vanilla to a high-speed blender or food processor. Blend until completely smooth, stopping to scrape down the sides as needed.

    3. With the blender running on low, add the melted chocolate and continue blending until completely incorporated. The pudding should be smooth, creamy, and thick. Avoid adding additional milk unless absolutely necessary for blending.

    4. Transfer the pudding to a container, cover, and refrigerate for at least 30 minutes, or until completely chilled and thickened. The pudding will continue to firm as the melted chocolate cools.

    5. To make the Date Oat Tombstones, add the dates to a food processor and pulse until broken apart. Add rolled oats and almond butter, and process again until the mixture begins to clump together into a sticky dough.

    6. Pinch a small amount between your fingers. It should hold together easily. If the mixture is too dry or crumbly to shape, add 1 teaspoon water and process again.

    7. Divide the mixture into 4 equal portions and roll each portion into a compact ball. Shape each ball directly into a tombstone using your hands. Gently press it into a thick, flat-sided shape approximately ½ inch thick, then form a flat bottom, straight sides, and a rounded top. The tombstones should be thick and sturdy enough to stand upright in the pudding rather than thin like cookies.

    8. Place the tombstones on a parchment-lined plate and refrigerate for 20–30 minutes, or until firm. This can happen at the same time the pudding is chilling, so it doesn't add to the total chill time.

    9. To make the clementine pumpkins, peel the clementines, keeping each fruit whole and intact. Cut the celery into 4 small, thin pieces, approximately ½ inch long. Insert one piece of celery into the opening at the top of each clementine to create a small pumpkin stem.

    10. To assemble the Dirt Cups, divide the chilled Chocolate Tofu Pudding evenly among four small clear glasses or dessert cups.

    11. Top each cup with approximately ¼ cup Plant Strong Chocolate Granola, spreading it across the pudding to create a generous layer of “dirt.” Keep the granola chunky rather than crushing it into fine crumbs.

    12. Just before serving, gently insert one Date Oat Tombstone into each cup, pressing the bottom slightly into the pudding so it stands upright while leaving most of the tombstone visible.

    13. Nestle one Clementine Pumpkin into the granola beside the tombstone. Press it very gently into the granola so it stays in place without sinking deeply into the pudding.

    14. Serve immediately after assembling for the crunchiest granola.
