Ingredients
- 1 bag PLANTSTRONG Cornbread & Muffin Mix (Regular or GF)
- 1 ¾ cup PLANTSTRONG Plant Milk of choice
- Juice from ½ lemon
- ½ cup applesauce
- 1 tsp vanilla extract
- Zest from 1 lemon
- ½ cup no sugar-added berry jam
- ½ cup PLANTSTRONG Mixed Berry Granola
Directions
- Preheat oven to 375℉ and line a muffin tin with paper or silicone liners.
- Combine lemon juice and plant milk and let sit for a couple minutes.
- Combine cornbread mix with lemon juice & milk mixture, lemon zest, and vanilla extract. Whisk until smooth.
- Scoop batter into muffin tin, along with a spoonful of berry jam. Swirl jam into the batter using a knife or toothpick.
- Top with PLANTSTRONG Mixed Berry Granola, gently pressing it into the batter.
- Bake for 20-22 minutes, or until a toothpick comes out with just a few crumbs. Enjoy!
