Ingredients

  • 7 Medjool dates, pitted
  • 3/4 cup whole grain rolled oats
  • 1 cup raw unsalted cashews
  • 1 tsp ground turmeric
  • Zest from 1 small lemon
  • Juice from 1/2 small lemon
  • 1 tiny pinch black pepper

Directions

  1. Soak dates in boiling water for 8-10 minutes, or until soft.
  2. Add dates to your food processor, and blend until they form a paste.
  3. Add the oats and cashews, and blend for a minute or two until smooth, and most of the oats and cashews have broken down.
  4. Add the turmeric, lemon zest, lemon juice, and pinch of black pepper. Pulse until the turmeric is incorporated.
  5. Spoon out about 1 ½ tbsp of dough, and roll into a ball. Repeat until all dough has been used. If your dough is too warm from the food processor, let it chill in the fridge for a few minutes.
  6. Store energy balls in the fridge and enjoy on demand!
