Lentil Sloppy Jill's
Some meals just belong in cold weather. These Lentil Sloppy Jills are thick, smoky, and spooned generously onto whole-grain buns with crisp greens. Made from green lentils, tomato purée, onion, garlic, and warm spices, they come together fast and reheat beautifully the next day.

Ingredients
- 3 cups cooked green lentils
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 (15-oz) can tomato purée
- 2 teaspoons smoked paprika
- 2 teaspoons chili powder
- ¼ cup barbecue sauce, or to taste
- Whole-grain hamburger buns
- Romaine, arugula, or greens of choice
Directions
- In a large skillet over medium heat, sauté the onion and garlic until soft and fragrant, about 4–5 minutes.
- Add the cooked lentils and stir to warm through.
- Pour in the tomato purée and stir until well combined.
- 4Add smoked paprika, chili powder, and barbecue sauce. Stir and reduce heat.
- Simmer 5–7 minutes, stirring occasionally, until thickened and rich. Adjust seasoning to taste.
- 6Spoon generously onto whole-grain buns and top with fresh greens. Serve warm and messy.
