Loaded Potato Waffles with Chili

Ingredients
- 4 large Yukon gold potatoes
- 1 package Plant Strong Chili of choice
- Optional toppings: avocado, green onion, cilantro, corn, diced tomato, lime juice, sriracha
Directions
- If potatoes are not already cooked, place whole scrubbed Yukon Gold potatoes in a pot and cover with water. Bring to a boil and cook 20–25 minutes, until fork-tender. Drain and let cool. You can even do this the day before or as part of your weekly meal prep.
- Preheat waffle iron.
- Place cooled potato in the waffle iron and press firmly. Cook 10–12 minutes, until golden and crisp.
- Repeat with remaining potatoes.
- Warm Plant Strong Chili according to package directions.
- Place crispy potato waffles on plates. Spoon warm chili over the top.
- Add your desired toppings and serve immediately.
