  • 4–6 ripe champagne (Ataulfo) mangoes

Directions

  1. Peel and cut the mangoes into chunks. If you'd like to serve the sorbet in the mango shells, carefully scoop out the flesh while leaving the shells intact.
  2. Arrange the mango pieces in a single layer on a parchment-lined baking sheet or tray. Freeze until completely solid, preferably overnight. If using the shells for serving, freeze those as well.
  3. Transfer the frozen mango to a high-speed blender or food processor.
  4. Blend until smooth and creamy, stopping occasionally to scrape down the sides if needed.
  5. Enjoy immediately for a soft-serve consistency. For a firmer sorbet, transfer to an airtight container (or back into the frozen mango shells) and freeze for 1–2 hours before serving.
