Peanut Chickpea Curry Pizza

Ingredients
- 1 packet PLANTSTRONG Secret Sauce Peanut Curry
- 1 tbsp water
- 1 15-oz canned chickpeas, rinsed, drained & pat dry
- ½ tbsp low-sodium soy sauce/tamari
- ½ tbsp sriracha
- ½ red bell pepper, sliced
- 3 green onions, chopped, white and green parts separated
- 1 small zucchini, sliced in circles
- ½ cup shredded carrots
- 1 ½ cups shredded cabbage
- ½ tsp ground ginger
- ½ tsp garlic powder
- ½ lime, juiced
- 1 pinch red pepper flakes
- 1 PLANTSTRONG Pizza Crust with sauce packet
- Green onions, chopped peanuts, red pepper flakes as garnish
Directions
- Preheat oven to 350°F. Line a baking sheet with parchment paper or preheat pizza stone.
- In a small bowl, whisk together one PLANTSTRONG Secret Sauce packet with water.
- In a separate bowl, add chickpeas, one scoop of your Secret Sauce, soy sauce, and sriracha. Toss to combine.
- Add chickpeas to baking sheet. Bake for 5-10 minutes, to soften. After chickpeas are done pre-cooking, turn heat on oven up to 450°F.
- Reserve 2 tbsp of Secret Sauce mixture and set aside. Add ½ of the tomato sauce packet to the remaining Secret Sauce in the bowl.
- Spread peanut tomato sauce on to pizza crust. Arrange chickpeas, bell pepper, zucchini and green onion onto pizza. Bake for 8-10 minutes.
- While pizza is baking, combine shredded carrots, cabbage, lime juice, garlic powder, red pepper flakes, and the rest of your Secret Sauce a bowl. Toss to combine.
- Top pizza with carrot cabbage mixture and bake for 3-4 minutes more.
- Remove from oven. Option to garnish with green onions, chopped peanuts, and more red pepper flakes.
