Pesto "Mozzarella" Pizza

Ingredients
- 1 PLANTSTRONG Pizza crust with sauce packet
- Homemade vegan pesto (recipe by Forks Over Knives)
- 1 ½ cups baby bella mushrooms, sliced
- ¾ cup cherry tomatoes, sliced
- ⅓ cup red onion, sliced
- Homemade vegan mozzarella (recipe by Nora Cooks, minus the salt)
- Red pepper flakes, for garnish
Directions
- Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper. Or preheat pizza stone.
- Prepare your pesto.
- Spread pesto onto PLANTSTRONG pizza crust. Cut a corner off of the provided PLANTSTRONG sauce packet. Swirl sauce over over pesto.
- Top with mushrooms, cherry tomato, and red onion.
- Prepare your homemade vegan mozzarella. Using two spoons, drop a few dollops of mozzarella onto your pizza.
- Bake for 12-15 minutes, or until crust is golden brown and mozzarella is slightly golden. Slice and serve!
