This easy pesto pizza combines our crispy Plant Strong pizza crust with homemade basil pesto, mushrooms, tomatoes, red onion, and creamy plant-powered mozzarella for a fresh, flavorful meal that’s ready in about 30 minutes.
Homemade vegan pesto (recipe by Forks Over Knives)
1 ½ cups baby bella mushrooms, sliced
¾ cup cherry tomatoes, sliced
⅓ cup red onion, sliced
Homemade vegan mozzarella (recipe by Nora Cooks)
Red pepper flakes, for garnish
Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper. Or preheat pizza stone.
Prepare your pesto.
Spread pesto onto Plant Strong pizza crust. Cut a corner off of the provided Plant Strong sauce packet. Swirl sauce over over pesto.
Top with mushrooms, cherry tomato, and red onion.
Prepare your homemade vegan mozzarella. Using two spoons, drop a few dollops of mozzarella onto your pizza.
Bake for 12-15 minutes, or until crust is golden brown and mozzarella is slightly golden. Slice and serve!
