Refined Sugar-Free Pecan Pie Bars

Ingredients
- 6 Medjool dates, pitted
- 1 cup oat flour
- ¼ cup unsweetened applesauce
- 1-2 tbsp tahini, almond or cashew butter
- 1 tbsp plant milk
- ¼ teaspoon cinnamon (optional)
- 1 ½ cups PLANTSTRONG Oatmeal Raisin Cookie Granola (or granola of choice)
- 4 Medjool dates, pitted
- 2-3 tbsp applesauce
- 1 tbsp tahini, almond, or cashew butter
- 7-8 Medjool dates, pitted
- ¼ cup tapioca flour
- ⅓ + ½ cup PLANTSTRONG plant milk
- 1 tsp vanilla extract
- 1 cup pecans, chopped
- ⅓ cup applesauce
Directions
- Preheat oven to 350℉. Line an 8x8 pan with parchment paper.
- Add dates to a food processor and blend into a paste. Add oat flour, applesauce, and cinnamon and pulse again. If too crumbly, add applesauce a bit at a time until mixture sticks together.
- Press crust mixture into your 8x8 pan. Bake for 8-10 minutes, or until slightly golden brown but not fully done. Remove crust from oven and let chill for 10-15 minutes in the fridge.
- Add dates to food processor and blend into a paste again. Add tapioca flour, plant milk, vanilla and blend again.
- Stir in applesauce and pecans.
- Transfer filling mixture to your pan. Optional: place whole pecans on top. Bake for for 30-40 min or until set.
- Once done, place in the fridge until fully cooled.
- Cut into squares and enjoy.
