Savory Cornbread Muffins
We dressed up our Cornbread Muffin Mix with savory mix-ins and the result was absolute perfection. Follow the instructions on the back of the package, but sub plain unsweetened plant milk yogurt for applesauce.

Ingredients
- 1 Package PLANTSTRONG Cornbread Mix
- ½ Cup unsweetened plain plant-based yogurt
- ¾ Cup corn
- ½ Cup red onion diced
- ¼ Cup jalapenos or bell peppers sliced
Directions
- Preheat oven to 375 degrees F.
- Mix cornbread mix, yogurt, broth and mix ins together until well combined, saving a couple of tablespoons of each mix in to add to the top of your muffins for decoration.
- Line a 12 cavity muffin tin with parchment liners then fill with batter.
- Add remaining set aside mix ins as decoration on the tops of the muffins.
- Bake at 375 for 20-23 minutes.
