Secret Sauce Cauliflower Curry

Ingredients
- 16 Ounces Cauliflower florets
- 2 Cups Butternut squash cubes
- 1 Medium Onion diced
- 2 Cloves Garlic
- 1 - 10 Ounce Bag of frozen peas
- 4 Cups PLANTSTRONG Vegetable Broth
- 1 Pound Baby potatoes quartered
- 2 Cups Water
- 1 Tablespoon Low-sodium soy sauce/tamari
- 2 Packets PLANTSTRONG Secret Sauce Peanut Curry
- Optional Garnish: green onions, crushed peanuts, crushed red pepper, sriracha
Directions
- Preheat a 5qt or larger stock pot or dutch oven on the stovetop.
- Add the diced onion and garlic to the hot pan to brown over medium heat.
- Add a few splashes of water to the pan to deglaze the bottom and saute the onions and garlic until onions are translucent.
- Add the remaining ingredients into the pan.
- Stir well to combine and simmer on medium heat for 30 minutes.
- Serve with brown rice, quinoa or barley and garnish with optional garnishes.
