Single Serving Shiitake Mushroom Ramen

Ingredients
- 3 cups PLANTSTRONG Shiitake Mushroom Broth
- 1/3 cup fresh shiitake mushrooms, sliced
- 2 tbsp green onions, chopped, just the white parts
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 1 tbsp soy sauce or tamari
- 1 cake Lotus Foods Organic Millet & Brown Rice Ramen
- 2 tbsp frozen edamame
- 2 tbsp frozen corn
- 1/4 cup frozen kale
- 1/3 cup soft tofu, cubed
- Green part of the green onion, chopped
- Toasted sesame seeds
- Yellowbird sriracha
Directions
- In a pot, add PLANTSTRONG Shiitake Mushroom Broth, sliced shiitake mushrooms, green onions, onion powder, garlic powder, and black pepper. Bring to a boil.
- Boil for 5-7 minutes, or until shiitake mushrooms are soft and have reduced in size. Add rice ramen noodles and cook for 3 minutes. Add frozen corn, kale, edamame, and tofu. Cook for 2-3 more minutes, or until noodles are done.
- Transfer to a bowl, top with green onion, sesame seeds, sriracha and serve.
