Sweet Corn Stuffing Casserole

Ingredients

  • 1 Package PLANTSTRONG Cornbread Mix
  • 2 Cups PLANTSTRONG Sweet Corn Broth
  • 1 - 10 Ounce Package frozen corn
  • 1/2 Cup Unsweetened applesauce
  • Optional add ins: red bell peppers, jalapenos, onions, celery, poultry seasoning

Directions

  1. Preheat oven to 375 degrees
  2. In a mixing bowl, combine, cornbread mix, applesauce, broth, corn, and any additional add ins like diced red bell pepper, jalapeños, onions, celery, or poultry seasoning.
  3. Fill a small casserole dish or 8 inch round cake pan with the batter
  4. Bake uncovered for 12 minutes.
  5. Remove from oven and stir completely to prevent a solid cake from forming.
  6. Return to the oven, bake an additional 20 minutes, then remove from the oven, stir and serve.
