Sweet Corn Stuffing Casserole

Ingredients
- 1 Package PLANTSTRONG Cornbread Mix
- 2 Cups PLANTSTRONG Sweet Corn Broth
- 1 - 10 Ounce Package frozen corn
- 1/2 Cup Unsweetened applesauce
- Optional add ins: red bell peppers, jalapenos, onions, celery, poultry seasoning
Directions
- Preheat oven to 375 degrees
- In a mixing bowl, combine, cornbread mix, applesauce, broth, corn, and any additional add ins like diced red bell pepper, jalapeños, onions, celery, or poultry seasoning.
- Fill a small casserole dish or 8 inch round cake pan with the batter
- Bake uncovered for 12 minutes.
- Remove from oven and stir completely to prevent a solid cake from forming.
- Return to the oven, bake an additional 20 minutes, then remove from the oven, stir and serve.
