Sweet Holy Deliciousness Soup

Sweet Holy Deliciousness Soup

There’s a reason this one is called Sweet Holy Deliciousness Soup. Sweet potatoes, red lentils, and hearty greens come together in a warming, satisfying soup seasoned with garlic, turmeric, garam masala, and just a touch of heat.

Red lentils break down as they cook, naturally giving the broth a thicker, almost creamy texture without the need for dairy. Sweet potatoes add even more body and a subtle sweetness, while two bunches of kale or your favorite leafy greens make this a seriously vegetable-packed meal.

Serve it on its own for a cozy bowl of soup or spoon it over your favorite whole grain for an even heartier meal.

Sweet potatoes, red lentils, and hearty greens make this warming soup both satisfying and simple. Turmeric, garam masala, garlic, and red pepper flakes bring plenty of flavor, while the red lentils cook down into a thick, hearty broth. Enjoy it by the bowl or serve it over your favorite whole grain.

Ingredients

  • 2 large onions, chopped
  • 6 large garlic cloves, chopped
  • 2 pinches crushed red pepper flakes
  • ½ teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 6 cups low sodium vegetable broth
  • 1 cup dried red lentils
  • 2 large sweet potatoes, peeled and cut into cubes
  • 2 bunches kale or other hearty greens, stems removed and leaves cut into bite-size pieces
  • Freshly ground black pepper, to taste

Directions

  1. Heat a large soup pot over medium heat. Add the onions and garlic with a splash of water or vegetable broth and cook for 5–7 minutes, stirring occasionally, until the onions have softened. Add additional liquid as needed to prevent sticking.
  2. Add the crushed red pepper flakes, turmeric, and garam masala. Stir for about 30 seconds, until fragrant.
  3. Add the vegetable broth, red lentils, and sweet potatoes. Bring to a boil, then reduce the heat to low, cover, and simmer for 15–20 minutes, or until the lentils are cooked and the sweet potatoes are tender.
  4. Add the kale or other greens and simmer for another 5 minutes, or until tender.
  5. Season with freshly ground black pepper to taste. Serve on its own or over your favorite cooked whole grain.
