Waffle Nice Cream Sandwich
Our Waffle Nice Cream Sandwich is a summer treat turned PLANTSTRONG-approved! Made with our PLANTSTRONG Pancake & Waffle Mix, and an easy homemade banana nice cream.

Ingredients
- 5 bananas, sliced
- ¼ cup - ⅓ cup PLANTSTRONG Plant Milk of choice
- 1 tsp vanilla extract
- 2 cups PLANTSTRONG Pancake & Waffle Mix of choice
- 2 cups PLANTSTRONG Plant Milk of choice
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- ½ cup date sweetened chocolate chips, melted
- ¼ cup freeze dried raspberries
Directions
- Freeze sliced bananas for a few hours, or overnight.
- Once frozen, add bananas to a food processor. Blend until mixture is broken down into fine crumbs.
- Add plant milk and vanilla and blend until smooth. Add more plant milk if necessary to get a creamy, ice cream texture.
- Transfer nice cream mixture to an 8x8 sheet pan lined with parchment paper. Freeze for 30 minutes, or until frozen.
- While nice cream is chilling, prepare your PLANTSTRONG pancake & waffle mix to package instructions. Cook in your favorite waffle iron. Let cool completely.
- Slice nice cream into squares, or to the shape of your waffle. Dip in or drizzle with melted date sweetened chocolate. Option to top with freeze dried raspberries.
