Waffle Nice Cream Sandwich

Ingredients

5 bananas, sliced
¼ cup - ⅓ cup Plant Strong Plant Milk of choice
1 tsp vanilla extract

2 cups Plant Strong Pancake & Waffle Mix of choice
2 cups Plant Strong Plant Milk of choice
1 tsp ground cinnamon
1 tsp vanilla extract

½ cup date sweetened chocolate chips, melted
¼ cup freeze dried raspberries

Directions

Freeze sliced bananas for a few hours, or overnight.
Once frozen, add bananas to a food processor. Blend until mixture is broken down into fine crumbs.
Add plant milk and vanilla and blend until smooth. Add more plant milk if necessary to get a creamy, ice cream texture.
Transfer nice cream mixture to an 8x8 sheet pan lined with parchment paper. Freeze for 30 minutes, or until frozen.
While nice cream is chilling, prepare your Plant Strong pancake & waffle mix to package instructions. Cook in your favorite waffle iron. Let cool completely.
Slice nice cream into squares, or to the shape of your waffle. Dip in or drizzle with melted date sweetened chocolate. Option to top with freeze dried raspberries.
