Ingredients
- 7 Medjool dates, pitted
- 3/4 cup whole grain rolled oats
- 1 cup raw unsalted cashews
- 1 tsp ground turmeric
- Zest from 1 small lemon
- Juice from 1/2 small lemon
- 1 tiny pinch black pepper
Directions
- Soak dates in boiling water for 8-10 minutes, or until soft.
- Add dates to your food processor, and blend until they form a paste.
- Add the oats and cashews, and blend for a minute or two until smooth, and most of the oats and cashews have broken down.
- Add the turmeric, lemon zest, lemon juice, and pinch of black pepper. Pulse until the turmeric is incorporated.
- Spoon out about 1 ½ tbsp of dough, and roll into a ball. Repeat until all dough has been used. If your dough is too warm from the food processor, let it chill in the fridge for a few minutes.
- Store energy balls in the fridge and enjoy on demand!
