Loaded Potato Waffles with Chili

Boil a potato. Press it into a waffle iron. Top it with chili.

Crispy on the outside, soft inside, these potato waffles turn into a sturdy base for any Plant Strong Chili. Add toppings that complement your favorite flavor, from creamy avocado to fresh herbs or a splash of hot sauce. It’s simple, filling, and surprisingly fun.

Ingredients

  • 4 large Yukon gold potatoes
  • 1 package Plant Strong Chili of choice
  • Optional toppings: avocado, green onion, cilantro, corn, diced tomato, lime juice, sriracha

Directions

  1. If potatoes are not already cooked, place whole scrubbed Yukon Gold potatoes in a pot and cover with water. Bring to a boil and cook 20–25 minutes, until fork-tender. Drain and let cool. You can even do this the day before or as part of your weekly meal prep.
  2. Preheat waffle iron.
  3. Place cooled potato in the waffle iron and press firmly. Cook 10–12 minutes, until golden and crisp.
  4. Repeat with remaining potatoes.
  5. Warm Plant Strong Chili according to package directions.
  6. Place crispy potato waffles on plates. Spoon warm chili over the top.
  7. Add your desired toppings and serve immediately.
