Simple Mashed Potatoes

Everyone needs a simple mashed potatoes recipe! Ours is made with delicious spices, PLANTSTRONG Shiitake Mushroom Broth, and PLANTSTRONG Unsweetened Almond Milk for extra flavor and creaminess. They go great with our Portobello Meatballs with Mushroom Gravy!

Ingredients

  • 4-6 large Yukon potatoes, cut into 1-inch pieces 
  • 1 tsp garlic powder 
  • 1 tsp onion powder 
  • 1 small bay leaf 
  • 3-4 tbsp PLANTSTRONG Shiitake Mushroom Broth
  • 3-4 tbsp PLANTSTRONG Unsweetened Almond Milk

Directions

  1. In a large pot add Yukon potatoes, garlic powder, onion powder and bay leaf. Fill the pot with water enough to cover the potatoes by an inch or so. Bring to a boil and cook for about 10 minutes, or until fork tender.
  2. Drain potatoes and transfer to a bowl. Mash potatoes into smaller pieces.
  3. Add broth and milk gradually, stirring and mashing in between. Add more or less liquid to your preference. Add more onion & garlic powder to taste if necessary. Add a pinch of salt if necessary. Serve.
