Ingredients

  • 3 cups PLANTSTRONG Shiitake Mushroom Broth 
  • 1/3 cup fresh shiitake mushrooms, sliced 
  • 2 tbsp green onions, chopped, just the white parts 
  • 1/2 tsp onion powder 
  • 1/2 tsp garlic powder 
  • 1/4 tsp black pepper 
  • 1 tbsp soy sauce or tamari 
  • 1 cake Lotus Foods Organic Millet & Brown Rice Ramen
  • 2 tbsp frozen edamame 
  • 2 tbsp frozen corn 
  • 1/4 cup frozen kale 
  • 1/3 cup soft tofu, cubed 
  • Green part of the green onion, chopped
  • Toasted sesame seeds
  • Yellowbird sriracha

Directions

  1. In a pot, add PLANTSTRONG Shiitake Mushroom Broth, sliced shiitake mushrooms, green onions, onion powder, garlic powder, and black pepper. Bring to a boil.
  2. Boil for 5-7 minutes, or until shiitake mushrooms are soft and have reduced in size. Add rice ramen noodles and cook for 3 minutes. Add frozen corn, kale, edamame, and tofu. Cook for 2-3 more minutes, or until noodles are done.
  3. Transfer to a bowl, top with green onion, sesame seeds, sriracha and serve.
