No Oil, No Salt, Spiced Pumpkin Oat Muffins

Ingredients
- 3 cups old fashioned oats
- 1/2 cup oat bran or oat flour
- 2 cups pumpkin puree
- 1 cup unsweetened applesauce
- 1/2 cup unsweetened plant milk
- 1/2 cup walnuts (optional)
- 1/2 cup golden raisins (optional)
- 2 tablespoons maple syrup
- 1 tablespoon flax meal or chia seed
- 1 tablespoon cinnamon
- 1 tablespoon pumpkin pie spice
- 1 teaspoon vanilla extract
Directions
- Preheat the oven to Bake at 400 degrees F.
- Mix dry ingredients together.
- Add wet ingredients and mix well.
- Spoon mixture into silicone muffin pan or parchment muffin liners in a muffin tin.
- Bake for 45 minutes.
