Cheezy Chickpea Broccoli Soup

Ingredients

2 cans chickpeas, reserve liquid (see step one)

3/4 cup nutritional yeast

1/4 cup whole wheat flour

1 box PLANTSTRONG Slow Simmered Vegetable Broth or 2 cups no salt added vegetable broth

2 cups unsweetened plant milk

1 teaspoon Bragg’s Liquid Aminos or low sodium tamari

1 teaspoon yellow mustard

1 teaspoon smoked paprika

1/2 teaspoon turmeric

1 head broccoli chopped fine

Salt and Fresh cracked black pepper to taste
Directions
Whisk flour, nutritional yeast, turmeric, and smoked paprika with the drained liquid (also called “aquafaba”) from the chickpeas.
Add the Bragg’s and the broth until well combined. Bring to a boil, then reduce the heat to low.
Add the plant milk and whisk until blended.
Add chickpeas and broccoli and simmer on low for 10 minutes or until broccoli is tender.
Do not bring to a boil after you add the plant milk. Salt to taste and serve with fresh cracked black pepper.
