Ingredients
- 1 Bag PLANTSTRONG cornbread muffin mix
- ½ Cup cinnamon applesauce
- 1 ½ Cups plant milk
- 1 Teaspoon cinnamon
- 3 Ripe bananas
- 2 Tablespoons date sugar
- ½ Teaspoon cinnamon
- ⅓ Cup chopped walnuts
Directions
- Preheat oven to 375 degrees F.
- Mash 2 bananas and mix with applesauce, milk, 1 t. cinnamon and muffin mix until blended.
- Dice up remaining banana and fold into batter.
- Line 12 cavity muffin tin with parchment liners and fill with batter.
- Mix date sugar and ½ teaspoon of cinnamon with chopped nuts, top each muffin batter with mixture - pressing nuts into batter.
- Bake 20-23 minutes.
