We dressed up our Cornbread Muffin Mix with savory mix-ins and the result was absolute perfection. Follow the instructions on the back of the package, but sub plain unsweetened plant milk yogurt for applesauce, and our PLANTSTRONG Sweet Corn broth for water!
Ingredients

1 Package PLANTSTRONG Cornbread Mix

1 ½ Cups PLANTSTRONG Sweet Corn Broth

½ Cup unsweetened plain plant-based yogurt

¾ Cup corn

½ Cup red onion diced

¼ Cup jalapenos or bell peppers sliced
Directions
Preheat oven to 375 degrees F.
Mix cornbread mix, yogurt, broth and mix ins together until well combined, saving a couple of tablespoons of each mix in to add to the top of your muffins for decoration.
Line a 12 cavity muffin tin with parchment liners then fill with batter.
Add remaining set aside mix ins as decoration on the tops of the muffins.
Bake at 375 for 20-23 minutes.
