Simple carrots transform into a smoky, grill-ready favorite, then get tucked into savory waffle buns made with our PLANTSTRONG Pancake & Waffle Mix. Add a generous scoop of hearty PLANTSTRONG Chunky Chipotle Chili on top and you’ve got a meal that’s rich in fiber, packed with protein, and brimming with flavor. It’s a creative, nutrient-dense way to enjoy real food that fuels your body and proves healthy eating can be every bit as delicious as it is nourishing.
Ingredients

6 medium carrots (similar size to hot dogs)

1–2 teaspoons liquid smoke

1 ½ cups PLANTSTRONG Pancake & Waffle Mix

1 ½ cups water or PLANTSTRONG plant milk (per package instructions)

¼ tsp garlic powder (optional)
-
¼ tsp smoked paprika (optional)

PLANTSTRONG Chunky Chipotle Chili (or chili of choice)

Fresh cilantro, chopped
-
Green onion, sliced
-
Lime wedges

Any additional toppings you love (mustard, hot sauce, etc.)

Directions
For the carrot dogs
Peel the carrots and trim ends.
Place in a pot of boiling water and cook until fork-tender but not mushy, about 8–10 minutes.
Drain and coat with liquid smoke. Transfer to the refrigerator to chill. The longer they chill, the more flavor they have. But if you’re in a pinch, 20-30 minutes will do.
When ready to serve, measure your carrots against your waffle buns and cut them to the best length.
Grill or sear the carrots in a hot grill pan or on the grill for 2–3 minutes, until lightly charred.
For the waffle buns
Prepare the PLANTSTRONG Pancake & Waffle Mix according to package directions.
Stir in garlic powder and smoked paprika, if desired, for a savory flavor.
Pour batter into a waffle maker and cook until golden.
While still warm, drape each waffle over the edge of a loaf pan or rolling pin so it cools in a bun shape.
For assembly
Place grilled carrot dogs into waffle buns.
Top with warmed PLANTSTRONG Chili.
Garnish with cilantro, green onion, and a squeeze of lime (or your toppings of choice).
Serve hot and enjoy!
