Secret Sauce Cauliflower Curry

16 Ounces Cauliflower florets
2 Cups Butternut squash cubes
1 Medium Onion diced
2 Cloves Garlic
1 - 10 Ounce Bag of frozen peas
4 Cups PLANTSTRONG Vegetable Broth
1 Pound Baby potatoes quartered
2 Cups Water
1 Tablespoon Low-sodium soy sauce/tamari
2 Packets PLANTSTRONG Secret Sauce Peanut Curry
Optional Garnish: green onions, crushed peanuts, crushed red pepper, sriracha
Preheat a 5qt or larger stock pot or dutch oven on the stovetop.
Add the diced onion and garlic to the hot pan to brown over medium heat.
Add a few splashes of water to the pan to deglaze the bottom and saute the onions and garlic until onions are translucent.
Add the remaining ingredients into the pan.
Stir well to combine and simmer on medium heat for 30 minutes.
Serve with brown rice, quinoa or barley and garnish with optional garnishes.
You can control the intensity of the flavor by adding more or less PLANTSTRONG Secret Sauce Peanut Curry mix.
