A hearty side dish to serve with lentil loaf, chili or soup!
Ingredients

1 Package PLANTSTRONG Cornbread Mix

2 Cups PLANTSTRONG Sweet Corn Broth
-
1 - 10 Ounce Package frozen corn
-
1/2 Cup Unsweetened applesauce

Optional add ins: red bell peppers, jalapenos, onions, celery, poultry seasoning
Directions
Preheat oven to 375 degrees
In a mixing bowl, combine, cornbread mix, applesauce, broth, corn, and any additional add ins like diced red bell pepper, jalapeños, onions, celery, or poultry seasoning.
Fill a small casserole dish or 8 inch round cake pan with the batter
Bake uncovered for 12 minutes.
Remove from oven and stir completely to prevent a solid cake from forming.
Return to the oven, bake an additional 20 minutes, then remove from the oven, stir and serve.
Note
The base recipe without add ins is a sweet, soft, scoopable corn casserole recipe. Adding in things like sauteed onion, red bell pepper, jalapeños, celery or poultry seasoning will add a savory flair to this easy side dish.
