2-3 sweet potatoes

2 tbsp PLANTSTRONG Sofrito Broth (or broth of choice)

1 package PLANTSTRONG Sweet Curry Burger Mix (or burger mix/patties of choice)

⅓ cup Kite Hill Unsweetened Plant Milk Yogurt

½ tsp garlic powder
-
½ tsp onion powder
-
¼ tsp smoked paprika
-
¼ tsp chili powder
-
1/8 tsp ground turmeric

1-2 tbsp lime juice

1 pinch salt

Pickled onions

Cilantro
-
Avocado, sliced

Jalapeño, sliced

Directions
Prepare burger mix to package instructions. Form mixture into small slider-size patties. Let chill in the fridge for 20 minutes before cooking.
Slice sweet potatoes into rounds about 1/4-1/2 inch thick. Brush both sides with vegetable broth and place on a baking sheet lined with parchment paper.
Bake at 400℉ in the oven for 10-15 minutes, or 375℉ in the air fryer for 7-10 minutes until sweet potatoes are soft enough to be pierced with a fork. If they start to burn, brush with more vegetable broth.
In a bowl, whisk together all ingredients for the sauce until smooth. Salt to taste if necessary.
Cook burgers in a pan on medium high heat for 3-4 minutes on each side, or until slightly browned.
Assemble burgers: spoon sauce onto two sweet potato slices. Place cilantro down on one slice, along with burger patty. Add sliced tomato, avocado, jalapeño, and pickled onions on top. Place second sweet potato slice, sauce side down, on top of ingredients. Use a toothpick to hold your sliders in place.
